For two Emporians, opening their own restaurant is a dream they’ve had for some time.

Two weeks ago, that dream came true with the opening of El Pollo Dorado, 312 W. South Ave.

Specializing in grilled chicken, the restaurant boasts a full menu that also ranges from staples like hamburgers and chicken sandwiches to specialties like fajitas and flautas.

The two business partners, Rafael Bringas and Arturo Delgado, live in Emporia but are originally from western Mexico. The recipes the two use for their grilled meats are original and focus on those regional tastes.

“Originally the recipes come from Mazatlan,” Bringas said. “They are original, special from us.”

The two wanted to bring the taste of western Mexico to Emporia, but Bringas also noted the healthier properties of grilled chicken.

“Chicken is good for everybody,” he said. “It’s low in cholesterol, it’s not too heavy.”

One special aspect of the business is that it offers grilled meats by the pound, something not seen very often in a restaurant.

“It’s something new and different,” Bringas said. “Something original.”

Both Bringas and Delgado do the cooking and all other work required for the business, including deliveries. It’s hard work, Bringas said, and the two spend a great deal of time keeping everything going.

“We work sometimes 16 hours a day, every day,” he said.

Business has been good so far, and eventually Bringas and Delgado would like to expand, adding employees and offering catering services. For now, though, the two are happy to start small to see how many customers their business can bring in.

All in all, Bringas said he is happy to be living in Emporia and owning his own business.

“Emporia is a nice town,” he said. “It’s small and quiet, and it’s a good place to raise kids.”
