Mexicali casseroles

OK, these are not necessarily specific to Mexicali, the capital of Baja, Mexico, but they are derived from a love of cuisine south of the border and a need for something easy to make in one pot.

I came to work one morning and found myself drowning in casserole recipes, so I’ve compiled a few here for you, as well as a gem I collected through a former coworker.

Lori Puckett — I had heard through the grapevine — had a terrific burrito casserole recipe, and she agreed to share it. She wrote:

“This ... recipe has traveled through generations from Iowa to South Dakota where it is now a big hit at Lakota Prairie Ranch Resort. In the 1980s when my parents, Roland and Pearl White, visited our young family in western South Dakota they would freeze the casserole in a cake pan and it would travel from Iowa to South Dakota.

Note, please, that the corn tortillas are not used in the Burrito Casserole--only the flour ones. mea culpa! - R
