Food ideas for Independence Day

Here comes another holiday! That means good eating.
July 4 is a great occasion for all day casual grazing, whether you’re at the lake or in the backyard.
You could pick up all kinds of goodies at the Farmers Market that morning. Located at Seventh Avenue and Merchant Street, and opening at 8 a.m., it will be a great way to start the day. Don’t forget to take in all the Twin Rivers Festival happenings that day, too, and (hopefully) the fireworks show that night.
The people at www.popcorn.org sent out this snack recipe. It’s a good one! They found some red, silver and blue foil muffin cups for serving that help keep the “Fourth of July” theme.
PEANUT BUTTER
POPCORN CUPS
1/2 cup peanut butter
1/2 cup butter or margarine
1 pkg. (10-1/2 oz.) miniature
marshmallows
6 cups freshly popped popcorn
6 cups spoon-size shredded wheat
1 cup dry roasted peanuts
1 cup raisins
Melt peanut butter and butter in a microwaveable bowl on high for 1 minute. Add marshmallows and heat another minute or until the marshmallows puff. Stir.
Toss together the popcorn, shredded wheat, peanuts and raisins in a large bowl. Pour the peanut butter mixture over and stir to coat.
Place paper liners into two 12-cup muffin pans. Divide mixture into 24 cups. Bake at 250 degrees for 10 minutes, and store in an airtight container.
