Hay for the horses

OUR STRUGGLING ECONOMY strikes on many levels. As can be expected during this time, donations have dropped off dramatically at Winding Road Equine Rescue & Retirement. It can be a struggle caring for all the retirees and those equines waiting to be adopted. We are forced to turn away many equines in need, although we still work with owners who are forced to give up their horses because of financial or health reasons.
One of our most emergent needs is for hay. If you need to make room for this year’s hay, or if you have surplus from this year’s crop, please consider a donation to help us feed the wonderful horses out here. We are 501(c)(3) Internal Revenue Service-designated public charity, and all contributions are tax deductible.

YY, I'm so glad you liked the tomato confit.
Eggplant? Mix up a quart of cottage cheese, a splash of olive oil, a couple of TAB of parmesan cheese, some chopped fresh basil, minced garlic to your liking, and a couple of eggs. Then slice eggplant lengthwise real thin (1/4 inch) and layer it with similar slices of zucchini in a casserole along with layers of the cottage cheese mixture. Salt and pepper each layer lightly. Mozzarella on the top. Cover with foil and bake at 350 for 45 minutes or so. Voila! Eggplant lasagna! Put the casserole on a cookie sheet because this gets real juicy and may, you know, get your oven dirty. I know you'll like this. I love it served cold the next day.
